Decadent Dutch Butter Cake

Sometimes I crave a homemade yummy treat. Sometimes nothing store-bought will do. Sometimes I’m feeling too lazy to make it. In Holland, there must be a lot of people like me. Those Hollanders came up with Boterkoek, Dutch for “Butter Cake”. It’s a satisfying cross between a moist cake and a buttery shortbread cookie. It’s also ridiculously easy to make and requires just 4 ingredients. But be forewarned it is RICH. Maybe even a little too rich…but I will make it again! Next time I’ll try cutting back a bit on the butter, despite my two in-house “Buttertons” being quite happy with its buttery-ness. The version I made is from Kevin and Amanda’s recipe found on their food and travel blog.

Ingredients

  • 2 sticks unsalted butter
  • 2 cups flour
  • 2/3 cup sugar
  • 1/4 tsp. salt

Method

  1. Melt butter. Add flour, sugar and salt. Mix just until combined.
  2. Press into an 8×8 baking pan lined with aluminum foil.
  3. Bake in preheated 350 F oven for 30 minutes.
  4. Use foil to lift cake out of pan once it’s cooled. Cut into bars.
